Sweet potato casserole with evaporated milk and marshmallows

  1. Preheat the oven to 350 degrees F (175 degrees C).

  2. Place sweet potatoes in a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 15 minutes. Drain.

  3. Place 1/2 of the sweet potatoes in a medium mixing bowl. Mash, then mix in condensed milk, butter, and cinnamon. Add remaining sweet potato cubes and sprinkle in all but 1 tablespoon brown sugar; stir gently to combine but not so much that the sugar dissolves. Transfer potato mixture to a 2-quart baking dish, top with marshmallows, and sprinkle remaining brown sugar on top.

  4. Bake in the preheated oven until marshmallows are golden brown, 10 to 15 minutes.

Sweet potato casserole with evaporated milk and marshmallows

This baked sweet potato casserole is my favorite. Wonderful side dish for Thanksgiving or Christmas but we love this anytime. It’s a super easy dish to make, doesn’t have a lot of ingredients and is a delicious dish! You may also love this great Mashed Potato Casserole, it’s another popular recipe.

Ingredients Needed for Baked Sweet Potato Casserole:

Large sweet potatoes, cooked and peeled (I boil mine. You could also use canned sweet potatoes, drained. Two of the tall 40-ounce cans, but I think the fresh sweet potatoes are best)

Butter

Heavy cream (could use evaporated milk or regular milk)

Brown sugar

Egg

Vanilla extract

Ground cinnamon

Nutmeg

Chopped (Walnuts or pecans)

Marshmallows (optional)

Recipe Notes: I used a 2 quart casserole dish for this recipe. This dish reheats well in the microwave or oven and could be put together the night before. Just add the nuts and marshmallows when cooked the next day. I’ve also made this in a 7X11 dish. Just whatever everything will fit in!

Recipe Comments: “I made this last week for Thanksgiving and HANDS DOWN best sweet potatoes EVER….. the family fell in love…. I have referred your page to soooo many people!”-Krisitie

  • 4 medium to large sweet potatoes cooked and peeled (I boil mine. You could also use canned sweet potatoes, drained. Two of the tall 40 ounce cans, but I think the uncanned are best)
  • 1 stick butter or 1/2 cup or 8 tablespoons
  • 1/4 cup heavy cream could use evaporated milk or regular milk
  • 1/2 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon Can use more of the spices if you like. I like to taste the sweet potatoes
  • 1/8 teaspoon nutmeg
  • 1 cup nuts chopped (Walnuts or pecans)
  • Marshmallows Optional

  • Cook and peel sweet potatoes and mash with potato masher.

  • Add butter and cream to potatoes just like if mashing regular potatoes. Stir in brown sugar, egg, vanilla, cinnamon and nutmeg. Spray a casserole dish with cooking spray.

  • Put mashed sweet potatoes in dish and sprinkle nuts over the top. Bake in preheated 350 degree oven for 35 to 40 minutes.

  • Remove from oven and add enough marshmallows to cover top of baking dish. Can use the miniature or big marshmallows. Put back in oven until marshmallows start to melt and brown on top. (I just stick mine under the broiler for a few minutes.)

I used a 7 x 11 casserole dish for this recipe.  Reheats well in the microwave or oven. This dish could be put together the night before without the nuts and marshmallows and cooked the next day.

Why do people add marshmallows to sweet potatoes?

It's basically a dessert disguised as a side dish In fact, they're just the right amount of sweet. Not only is nonsensically coating them with a blanket of marshmallows a disservice to an already great and healthy ingredient, but doing so essentially tips the scale from a side dish to a dessert.

Why do you add eggs to sweet potato casserole?

The egg is the all-important binder in a sweet potato casserole: it enriches and stiffens the mixture without making it heavy. Make sure to cool the mash slightly before adding the egg so it doesn't scramble, and to stir well so there are no streaks of cooked egg white in the finished dish.

Do you need eggs in sweet potato casserole?

Should I Put Eggs In My Sweet Potato Casserole? Yes, sweet potato casseroles are best with eggs. Eggs add structure to the dish so that it's more than just a sweet potato mash. It's important to make sure the sweet potatoes have cooled enough before you mix in the eggs, otherwise they'll just scramble in the bowl.

Why does sweet potato casserole have marshmallows?

According to Saveur, it was 1917 when the first instance of sweet potatoes baked with a coat of marshmallows appeared in a recipe booklet commissioned by Angelus Marshmallows. Since then, the dish found its way into more and more culinary publications, allowing for nationwide recognition.
