FAQ's

What ingredient keeps meatloaf from falling apart?

Eggs are the binder that works to keep your meatloaf together.

Should you cover meatloaf when you bake it?

I don't recommend that you cover your meatloaf, if it's covered then it will be steamed instead of roasted.

Should I drain the grease from my meatloaf?

I always like to drain the grease so that my meatloaf does not become soggy.

Things to know

  • If you don't have parchment paper on hand to line your baking sheet you can also use aluminum foil.
  • This meatloaf recipe can easily be halved to make a smaller loaf. Just be sure to adjust the cooking time accordingly.
  • Instead of using a loaf pan, you can also shape it into a loaf and then bake it on a rimmed baking sheet.
  • Be careful not to overmix your meatloaf, overmixing can result in a dry and crumbly meatloaf.

What is the secret to moist meatloaf?

Use high-fat meat. For an all-beef meatloaf, always use a higher-fat cut, at least 15 percent. For a meatloaf made with a leaner beef or turkey, consider mixing in some ground pork and/or veal in order to achieve a moist, tender meatloaf. Chopping up bacon and adding it to the mix is always a great way to add fat.

When baking a meatloaf Do you bake it covered or uncovered?

Do you cover meatloaf when baking? If you have a single large meatloaf then you should cover it with a piece of aluminum foil during cooking to keep it moist, but do not let it be covered for the whole cooking process. Take off the meatloaf cover and leave it uncovered for the last 15 minutes of baking.

Is it better to use milk or water in meatloaf?

Milk is the preferred liquid for meatloaf, but there are some great substitutes if you do not want to use it. The reason milk is added in meatloaf is that it soaks the bread crumbs which add needed moisture to the meatloaf.
