Best way to cook marinated steak tips

Steak Tips are an east coast staple, especially during the humid summer months. It's a quick, cheap dinner but one that I always crave when the weather warms up. Some of my favorite memories are going camping as a kid and having steak tips for dinner after spending the day exploring or swimming at the beach. Now that I live in San Francisco I developed a version of my favorite recipe that can be made in the oven and still come out amazing. Here is my recipe for Marinated Steak Tips.

What are steaks tips?

Steak tips are usually a collection of smaller tendons cut into cubes. The tastiest of these muscle groups is the flap steak, which can also be bought whole. Steak tips are usually a cheap cut of beef because it comes from parts of the cow that are normally not sold individually. That being said, these cuts are some of the most delicious.

How to cook steak tips

My favorite way to cook steak tips is on the grill. Since these are smaller cuts, they cook quickly and the added char from the grill adds a lot of flavor. However if you're like me and have no room for a grill or if you want to make these in winter, I cook the meat in a cast iron skillet then finish it under the broiler to still get that slight char on the outside. Either method will produce a delicious result.

What to eat with steak tips

My favorite thing to eat with steak tips is white rice with a bit of butter. It's so simple, but so good. Onions, peppers and other grilled vegetables are also a great pairing and can often be cooked at the same time as the steak tips. Steak tips will pair well with most starchy or green vegetables, however I'd avoid pairing it with anything you wouldn't normally eat with beef.

Why do you marinate steak tips

Marinating steak tips will not only give them a more robust flavor, but it will often tenderize the meat as well. Since this is a smaller cut of meat, it has a higher chance of drying out if it's not marinated. You don't have to marinate this cut for a long time however. Since it's a smaller cut, it will absorb the marinade pretty quickly. I usually marinate steak tips for at least 1 hour or up to 24 hrs.

  • 2 Pounds Steak Tips
  • ½ Cup Olive Oil
  • 4 Cloves Garlic Minced
  • 1 Tbsp Sea Salt
  • 1 Tbsp Cracked Black Pepper

  • Combine all ingredients into a large resealable ziploc bag. Shake to evenly coat. Store in refrigerator for at least 1 hour or up to 24 hours. 

  • Preheat broiler on high.

  • Heat a cast iron skillet on medium-high heat. Remove meat from ziploc bag and place in skillet, discard leftover marinade.

  • Cook meat for 5 minutes or until seared on all sides. Then take skillet and put in oven under the broiler. Cook for several minutes or until edges of the meat begin to char.

  • Remove carefully from oven and serve with rice and vegetables. Enjoy!
