Autumn’s Banana Apple Muffins
Serves: 9 (1 muffin each)
Container Equivalent:  1 purple, 1 blue

Ingredients:
2 large eggs, lightly beaten
1 cup mashed ripe banana (about 2 medium bananas)
1 Tbsp.  organic grass-fed butter, melted or coconut oil, melted
1 1/2 cups almond flour
3/4 tsp. baking soda, gluten free
1 dash sea salt (or Himalayan salt)
1/2 cup chopped apple (about 3/4 medium apple)  I used Granny Smith

Directions:
1.  Preheat oven to 350 F.
2.  Prepare nine muffin cups by lining with muffin tin layers or coating with muffin spray.
3.  Combine eggs, banana, and butter in a medium bowl; mix well; set aside.
4.  Combine almond flour, baking soda, and salt in a medium bowl; mix well.
5.  Add almond meal mixture to egg mixture; mix until blended.
6.  Add apple; mix until just blended.
7.  Divide batter evenly between prepared muffin cups.
8.  Bake 16 to 18 minutes, or until golden brown and toothpick inserted into the center comes out clean.
9.  Transfer muffins to rack; cool.

NOTES: I ground rolled oats and used in place of almond flour. This gives it a heartier textures, but same yummy taste!

  • Nonstick cooking spray (optional)
  • cups whole-wheat flour
  • ½ cup wheat bran (or oat bran)
  • 1 Tbsp. baking powder
  • ½ tsp. baking soda
  • ¾ cup apple butter, no sugar added
  • ½ cup low-fat buttermilk (or low-fat plain yogurt)
  • 2 large egg whites (¼ cup)
  • 1 medium apple, chopped (about 1 cup)
  • ½ cup prunes, chopped and pitted

  1. Preheat oven to 350° F.

  2. Prepare twelve muffin cups by lining with muffin papers or coating with spray.

  3. Combine flour, bran, baking powder, and baking soda in a medium bowl; mix well. Set aside.

  4. Combine apple butter, buttermilk, and egg whites in a large bowl; mix well.

  5. Add flour mixture to apple butter mixture; mix until just blended.

  6. Add apples and prunes; mix until just blended.

  7. Evenly divide batter among twelve prepared muffin cups.

  8. Bake for 16 to 18 minutes, or until golden brown and tester inserted into the center comes out clean.

  9. Transfer muffins to rack; cool.

Are banana muffins healthy?

While a banana or banana nut muffin may sound naturally healthy, they are often loaded with fat and sugar. These excess nutrients and calories can contribute to excess weight, which may put your heart at risk.

What temperature do you bake muffins at?

Bake muffins at 400° F for 15 to 17 minutes, or until a toothpick inserted in the center comes out with little to no crumbs. Let muffins cool in the pan for 5 minutes before transferring to a cooling rack.

Can you add bananas to box muffin mix?

Yes! If you are going to add bananas, we recommend adding no more than 2 mashed bananas and omitting the water, since the banana will add moisture.
